FAMILIAR FLAVOURS.
CAREFULLY CURATED
This micro-lot is produced on a much smaller scale – 100% Paraiso arabica from Adolfo’s experimental plot, with only the ripest cherries selected, pulped and the beans gently sun-dried in their sticky, sugary mucilage on raised beds. Paraiso has been chosen for its tasty cup profile, high yield, compact size and disease resistance.
How to brew
We normally lean toward filter brewing for the producer series as the method highlights the more complex and delicate flavours in lighter roasted coffee. As always, we default to the industry standard of 60g of coffee per litre of water as a starting point.
For espresso try a 1:2.5 brew ratio and shot times of around 24-30 seconds.
Tasting notes
Tasty chocolate, vanilla and hazelnut notes, with a full body and bright citrus finish. The Pulped Natural processing lends the coffee a depth of sweetness, with a fresh and zingy character. A smooth batch brew or pour over and a rounded, chocolaty espresso.
